k0.sourdough was born from a quiet revolution in my home kitchen—a place where fermentation, intuition, and nutrition come together. Named after my very first “kid” (before my two little ones), k0 is more than a sourdough starter. It’s a living symbol of patience, nourishment, and creativity.

The ear almost stopped me.

I thought it meant everything.
Skill. Quality. Readiness.

But the deeper I went,
the more I realised:

The breads that feels better and my body can handheld interesting…
Are not always the ones with the most dramatic ears.

And I started to see
how much Instagram was shaping my perception—
making me question my own ability to bake and nourish myself and others.

Ich dachte, sie bedeutet alles:
Können. Qualität. Bereitschaft.

Doch je tiefer ich ging,
desto mehr habe ich verstanden:

Die Brote, die oft am bekömmlichsten sind
und ernährungsphysiologisch am interessantesten…
sind nicht unbedingt die mit den spektakulärsten Ohren.

Und ich weiß heute, wofür ich mich entscheide.

I asked what matters most to you —beautiful open crumb or nutrition?

70% chose nutrition.

At k0.sourdough we will keep making loafs with longer fermentation, they may not rise as much as others you may see on instagram but they are by far better from a nutritional point of view.

It’s reassuring to see that most of you value nutrition. 🙏🏼

Bei k0.sourdough setzen wir weiterhin auf längere Fermentation.
Die Brote gehen vielleicht nicht so stark auf wie manche, die man auf Instagram sieht, sind dafür aber ernährungsphysiologisch deutlich wertvoller.

Es ist schön zu sehen, dass die meisten von euch den Fokus auf Nährwert legen. 🙏🏼

Soaking seeds is a small step that makes a rather big difference!

Phytic acid is a natural compound found in seeds, grains, nuts, and legumes. Its role in the plant is to store phosphorus, but nutritionally it can bind to minerals such as iron, zinc, calcium, and magnesium, making them less available for absorption.

Soaking seeds activates an enzyme called phytase, which begins to break down phytic acid.

Phytinsäure bindet Mineralstoffe wie Eisen, Zink und Magnesium und kann deren Aufnahme verringern. Durch Einweichen wird sie leicht reduziert und die Samen werden besser verdaulich, besonders wenn Zeit, Wärme und etwas Säure im Spiel sind. Eine Sauerteigfermentation ist deutlich wirksamer im Abbau von Phytinsäure, da Säure, Zeit und Enzyme zusammenwirken. Am effektivsten ist die Kombination aus eingeweichten Samen und einer langen Sauerteigführung. Insgesamt ist Phytinsäure bei einer ausgewogenen Ernährung jedoch kein grosses Problem.
